Ingredients

  • Olive oil

  • 500g Bread flour

  • 1 tsp Salt

  • 7g Dried yeast

  • 340g Warm Water

  • 1 tsp Rosemary

  • 1/2 tsp Garlic Powder / 1 clove

  • 1 tsp chilli flakes (optional)

  • ~90g Black Olives

  • ~90g Green Olives

  • Cast iron pot

  • Bowl(s)

  • Tea towel

Directions

  1. Mix flour, salt, garlic, chilli flakes, rosemary, yeast, and water in a bowl.
  2. Knead until it pulls away from the bowl.
  3. Add the olives - knead until combined on a floured surface.
  4. Grease a bowl with olive oil.
  5. Transfer the dough to the greased bowl and cover with cling film.
  6. Rest for 2.5 hrs - it should triple in size.
  7. On a floured surface, roll the dough into a ball.
  8. Sprinkle flour on a tea towel and wrap up the dough.
  9. Rest for 30-45 mins and preheat the oven to 220°c with the cast iron pot inside (no Lidl and DO NOT add oil).
  10. Grease the cast iron and add the dough.
  11. Bake for 25-30 mins with the lid.
  12. Remove the lid and bake for 20 more mins.
  13. Leave to cool.
