Cast iron olive bread
Ingredients
Olive oil
500g Bread flour
1 tsp Salt
7g Dried yeast
340g Warm Water
1 tsp Rosemary
1/2 tsp Garlic Powder / 1 clove
1 tsp chilli flakes (optional)
~90g Black Olives
~90g Green Olives
Cast iron pot
Bowl(s)
Tea towel
Directions
- Mix flour, salt, garlic, chilli flakes, rosemary, yeast, and water in a bowl.
- Knead until it pulls away from the bowl.
- Add the olives - knead until combined on a floured surface.
- Grease a bowl with olive oil.
- Transfer the dough to the greased bowl and cover with cling film.
- Rest for 2.5 hrs - it should triple in size.
- On a floured surface, roll the dough into a ball.
- Sprinkle flour on a tea towel and wrap up the dough.
- Rest for 30-45 mins and preheat the oven to 220°c with the cast iron pot inside (no Lidl and DO NOT add oil).
- Grease the cast iron and add the dough.
- Bake for 25-30 mins with the lid.
- Remove the lid and bake for 20 more mins.
- Leave to cool.
